Sogliola alla parmigiana on spinach with parsley potatoes

Redfish (or similar) with parmesan and butter on spinach, served with potatoes and parsley


Ingredients:
Serves 4

The fish

Approximately 1 kg redfish fillet (or sole, cod, or plaice fillets)

200 g butter

100 g grated Grana Padano or Parmigiano Reggiano

Water

S/P, as needed

Fresh spinach or baby spinach

1 kg fresh spinach or baby spinach

Approximately 4 tablespoons extra virgin olive oil

1 clove of garlic

1-2 pinches of chili/peperoncino, as needed

Salt, as needed

The potatoes

800 g potatoes (large potatoes)

4 tablespoons extra virgin olive oil

4 sprigs of parsley

S/p, as needed

What you can do in advance

It is a good idea to:

Pots and pans

Level of difficulty

Place all the ingredients on your kitchen counter and divide them into small piles, as we have done in the shopping list above. This way, the various items you need to make the different dishes will be together and ready to use.

  • Grate the Grana Padano/Parmesan cheese in advance.
  • Possibly having water standing in a small jug
  • Have washed the spinach
  • Peel the garlic
  • Have peeled
  • the potatoes
  • Rinse the parsley
  • Steaming equipment for fish (or pan)
  • Pot for the potatoes
  • Pan for the spinach
