Fresh pasta and duck ragout


Ingredients:

Serves 4

Fresh pasta (which you make yourself)

300 g type ‘00’ flour

200 g semolina

6 eggs

Water

Salt

NB: You don't need a pasta machine. Just a little muscle and a good rolling pin.

Duck ragout

2 chicken thighs, approx. 500 g (OR 2 guinea fowl breasts with the thigh attached, approx. 500 g. Or 400 g wild boar or boneless quail. Or a wild chicken, approx. 500 g (if you can find one). Or approx. 500 g poussin.

Can you use regular chicken or poussin? In principle, you can, but the dish will have a milder flavor. 

2 carrots 

4 stalks of celery

1 onion

1 bay leaf 

2 sprigs of parsley

Peperoncino (chili), as needed

S/P, as needed

Extra virgin olive oil, as needed

1/2 tablespoon salted butter

10-15 cl white wine

Approximately 50 g Grana Padano or Parmigiano Reggiano – preferably aged at least 24 months
