Risotto ai funghi
Risotto with mushrooms


Ingredients: Serves 4
Garlic_aglio_italianLIveCooking

Vegetable stock

1-2 tablespoons extra virgin olive oil

1 carrot

2 celery stalks

1 salad onion or 2-3 spring onions

1 potato

Salt

Water

The mushrooms

½ kg mushrooms (e.g., Karl Johan or mixed mushrooms)

2-3 parsley stalks

1 clove of garlic

1 pinch of peperoncino

4 tablespoons extra virgin olive oil

Salt

The risotto

½ salad onion or 1-2 spring onions

5-6 tablespoons extra virgin olive oil

200 g butter

150 g grated Grana Padano or Parmigiano Reggiano

3-4 parsley stalks

Approximately 320 g risotto rice

We are live between 5:00 p.m. and 6:00 p.m.

We cook live on Instagram on Tuesdays between 5:00 p.m. and 6:00 p.m. We start at 5:00 p.m., and cooking takes between 20 and 60 minutes, depending on the dish. You are always welcome to join us!

What you can do in advance

Put all the ingredients out on your kitchen counter so you're ready at 5 p.m. when we get started.

Divide them into small piles on the kitchen table, as we have done in the shopping list above, so that the various items you need to make the different dishes are grouped together and ready to use.

It is a good idea to:

Peel the salad onions/spring onions

Finely chop the parsley

Peel the garlic

Grate the cheese

Have butter and rice ready

Pots and pans
