Tagliatelle ai funghi
Tagliatelle with mushrooms
Ingredients: Serves 4
Preparation of stock
1 chicken thigh
1 stalk of celery
1 sprig of parsley
1 potato
1 carrot
1 onion
2 liters of water
Sauce
4 tablespoons extra virgin olive oil
1 clove of garlic
Pinch of chili
400 g mixed mushrooms (e.g., button mushrooms, oyster mushrooms, chanterelles, porcini mushrooms, etc.)
S/P
10 sprigs of parsley
100 g butter
100 g Grana Padano or Parmigiano Reggiano
Pasta
Approximately 25 g salt
Water
400 g tagliatelle all’uovo (egg tagliatelle)

What you can do in advance
Put all the ingredients out on your kitchen counter so you're ready at 5 p.m. when we get started.
Divide them into small piles on the kitchen table, as we have done in the shopping list above, so that the various items you need to make the different dishes are grouped together and ready to use.
It is a good idea to:
Have the chicken thighs ready
Have the celery ready
Peel the carrot, potato, and onion.
Wash the parsley and have the stems ready.
Peel the garlic
Washing the mushrooms
Grate the cheese
