Pasta ai peperoncini dolci
Pasta with sweet green peppers


Ingredients: Serves 4
Friggitelli - sweet green peppers

The peppers

1 liter of seed oil

250 g sweet green peppers

750 g tomatoes, preferably 'pachino'

150 g buffalo mozzarella or scamorza

Salt

4 tablespoons olive oil, if desired

1 pinch of peperoncino

2 cloves of garlic

Basil

Pasta

Approximately 25 g salt

Water

400 g short pasta (e.g., penne, fusilli, rigatoni)

What you can do in advance

Put all the ingredients out on your kitchen counter so you're ready at 5 p.m. when we get started.

Divide them into small piles on the kitchen table, as we have done in the shopping list above, so that the various items you need to make the different dishes are grouped together and ready to use.

It is a good idea to:

Peel the garlic cloves

Wash the tomatoes

Wash the green peppers

Wash basil leaves

Cut the mozzarella/provola/scamorza into small pieces.
