Neapolitan hamburger and escarole salad
Ingredients: Serves 4
Neapolitan hamburger
600 g minced beef, veal, and pork
6 g ground pepper
10 g salt
20 g fennel seeds
2 cloves of garlic
100 g mozzarella or scamorza or provala (smoked mozzarella)
1 egg
Escarole
Extra virgin olive oil, as needed
1 head of escarole lettuce
1 tablespoon raisins
1 tablespoon pine nuts
Salt, as needed
1 pinch of peperoncino
1 clove of garlic

What you can do in advance
Put all the ingredients out on your kitchen counter so you're ready at 5 p.m. when we get started.
Divide them into small piles on the kitchen table, as we have done in the shopping list above, so that the various items you need to make the different dishes are grouped together and ready to use.
