Merluzzo con i piselli e bruschettine

Cod with fresh green peas and bruschetta


Ingredients are for 4 persons
Cod and fresh peas

6-800 gr cod filet (or likewise)

Ca 4-8 spoons olive oil extra vergine

1 piece of  ’pancetta’ (ca ½ cm thick). If you can’t find ’pancetta’ go for non-smoked bacon

2 shallots

1 kg fresh peas

2-3 stalks broad-leaved parsley

Water

S/P

Bruschettine

8-12 pieces of toasted bread

Ca 4-8 spoons olive oil extra vergine

250 gr pachino tomatoes (cherry)

1 clove of garlic

What can you do beforehand

Place all the ingrediens on your kitchen table so that you’re set for 5 pm  

Divide them into small islands on the kitchen table, as we have divided into the shopping list above, so that the different things you need to cook stand together and are ready to use

It’s a good idea to

  • Bellow the green peas
  • Peel the shallots
  • Fine chop the parsley
  • Wash the tomatoes
  • Peel the garlic.
Pots and pans 
  • Deep pan with lid
  • Toaster (you can also toast the bread in the oven)
