Cod with fresh green peas and bruschetta


Ingredients are for 4 persons

Cod and fresh peas

6-800 g cod fillet (or similar)

Approximately 4-8 tablespoons of extra virgin olive oil

1 piece of pancetta (approx. ½ cm thick). If you can't find pancetta, use unsmoked bacon.

2 shallots

1 kg fresh peas

2-3 stalks of broad-leaved parsley

Water

Bruschettine

8-12 pieces of toasted bread

Approximately 4-8 tablespoons of extra virgin olive oil

250 g cherry tomatoes

1 clove of garlic

What can you do beforehand

Place all the ingredients on your kitchen table so that you're ready for 5 pm.  

Divide them into small piles on the kitchen table, as we have divided them into the shopping list above, so that the different things you need to cook are together and ready to use.

It is a good idea to

  • Below the green peas
  • Peel the shallots
  • Finely chop the parsley
  • Wash the tomatoes
  • Peel the garlic.
Pots and pans 
  • Deep pan with lid
  • Toaster (you can also toast the bread in the oven)
