Tagliatelle ai funghi
Tagliatelle with fungi misti


Ingredients: Serves 4
Tagliatelle_Italian live cooking

Preparation of stock

1 chicken thigh

1 celery stalk

1 parsley stalk

1 potato

1 carrot

1 onion

2 l water

Sauce

4 tablespoons of extra virgin olive oil

1 clove of garlic

1 pinch of chili

400 g mixed mushrooms/funghi misti (eg mushrooms, oyster mushrooms/pleurus, chanterelles, porcini mushrooms and similar)

S/P

10 stalks of parsley

100 g butter

100 g Grana Padano or Parmigiano Reggiano

Pasta

Approximately 25 g salt

Water

400 g tagliatelle all’uovo (tagliatelle with egg)

What can you do beforehand

Place all the ingredients on your kitchen table so that you are all set for 5 pm.

Divide into small islands following the shopping list so that what you need to cook is together and ready to use.

It is a good idea to

  • Have your chicken thigh ready

  • Wash and have your celery ready

  • Peel the carrot, potato, and onion.

  • Wash the parsley and have the stalks ready

  • Peel the garlic

  • Wash the mushrooms

  • Grate the cheese
