Tagliatelle ai funghi
Tagliatelle with fungi misti
Ingredients: Serves 4
Preparation of stock
1 chicken thigh
1 celery stalk
1 parsley stalk
1 potato
1 carrot
1 onion
2 l water
Sauce
4 tablespoons of extra virgin olive oil
1 clove of garlic
1 pinch of chili
400 g mixed mushrooms/funghi misti (eg mushrooms, oyster mushrooms/pleurus, chanterelles, porcini mushrooms and similar)

10 stalks of parsley
100 g butter
100 g Grana Padano or Parmigiano Reggiano
Pasta
Approximately 25 g salt
Water
400 g tagliatelle all’uovo (tagliatelle with egg)

What can you do beforehand
Place all the ingredients on your kitchen table so that you are all set for 5 pm.
Divide into small islands following the shopping list so that what you need to cook is together and ready to use.
It is a good idea to
Have your chicken thigh ready
Wash and have your celery ready
Peel the carrot, potato, and onion.
Wash the parsley and have the stalks ready
Peel the garlic
Wash the mushrooms
Grate the cheese
