Sogliola alla parmigiana on spinach with parsley potatoes

Sole (or similar) with parmesan and butter on spinach served with parsley potatoes


Ingredients:
s 4 persons

The fish

Approximately 1 kg redfish fillet (or sole, cod, or plaice fillets)

200 g butter

100 g grated Grana Padano or Parmigiano Reggiano

Water

S/P, as needed

Fresh spinach or baby spinach

1 kg of fresh spinach or baby spinach

Approximately 4 tablespoons of extra virgin olive oil

1 clove of garlic

1-2 pinches of chili/peperoncino

Salt

The potatoes

800 g potatoes (large ones)

4 tablespoons extra virgin olive oil

4 stalks of parsley

What can you do beforehand?

Place all the ingredients on your kitchen table so that you're ready for 5 pm.  

Divide them into small piles on the kitchen table, as we have divided them into the shopping list above, so that the different things you need to cook are together and ready to use.

Beforehand, it’s a good idea to

  • Grate the Grana Padano/Parmesan cheese.
  • Leave water in jug  
  • Wash the spinach
  • Peel the garlic
  • Peel the potatoes
  • Wash the parsley

Pots and pans

 
  • Steam equipment for the fish (or a regular pan)
  • Pot for the potatoes
  • Pan for the spinach
