Sogliola alla parmigiana su spinaci con patate prezzemolate

Sole (or likewise) with parmesan and butter on spinach served with parsley potatoes

4 persons

The fish

Ca 1 kg rødtunge filet (eller søtunge, torsk eller rødspætte-fileter)

200 gr smør

100 gr revet Grana Padano eller Parmigiano Reggiano


S/P, efter behov

Fresh spinach or baby spinach

1 kg of fresh spinach or baby spinach

Ca 4 spoons olive oil extra vergine

1 clove of garlic

1-2 pinches of chili/peperoncino



800 gr potatoes (big ones)

4 spoons olive oil extra vergine

4 stalks of parsley

What can you do beforehand​

Place all the ingrediens on your kitchen table so that you’re set for 5 pm  

Divide them into small islands on the kitchen table, as we have divided into the shopping list above, so that the different things you need to cook stand together and are ready to use

Beforehand, it’s a good idea to

  • Grate the Grana Padano/parmesan
  • Leave water in jug  
  • Wash the spinach
  • Peel the garlic
  • Peel the potatoes
  • Wash the parsley

Pots and pans

  • Steam equipment for the fish (or a regular pan)
  • Pot for the potatoes
  • Pan for the spinach
