Risotto with lobster and asparagus


Ingredients: Serves 4
Risotto

300 g Arborio rice or similar

150 g asparagus

150 g virgin lobster

Approximately 50 g Grana Padano / Parmigiano Reggiano – grated

Extra virgin olive oil

1 shallot

10-15 cl white wine

50 g salted butter

2-3 stalks of broad-leaved parsley

Broth

1 carrot

2 stalks of celery

1 onion

1 large potato

Water

Salt

What can you do beforehand

Place all the ingredients on your kitchen table so that you're ready for 5 pm.  

Divide them into small piles on the kitchen table, as we have divided them into the shopping list above, so that the different things you need to cook are together and ready to use.

It is a good idea to

  • Have boiled water ready
  • Wash the asparagus
  • Release the virgin lobster from its shell
  • Grate the Grana Padano/Parmigiano Reggiano
  • Peel the shallot
  • Finely chop the parsley
  • Peel the arot
  • Wash the celery
  • Peel the onion
  • Peel the potato

Pots and pans
  • A pot for the risotto
  • A pot for the broth
