Risotto ai scampi e asparagi
Risotto with lobster and asparagus
Ingredients: Serves 4
Risotto
300 g Arborio rice
150 g asparagus
150 g lobster
Approximately 50 g Grana Padano / Parmigiano Reggiano – grated
Extra virgin olive oil
1 shallot
10-15 cl white wine
50 g butter
2-3 sprigs of flat-leaf parsley
S/P
Broth
1 carrot
2 stalks of celery
1 onion
1 large potato
Water
Salt

What you can do in advance
Put all the ingredients out on your kitchen counter so you're ready at 5 p.m. when we get started.
Divide them into small piles on the kitchen table, as we have done in the shopping list above, so that the various items you need to make the different dishes are grouped together and ready to use.
It is a good idea to
- Put water on to boil
- Wash the asparagus spears
- Remove the lobster from its shell, if necessary.
- Grate Grana Padano / Parmigiano Reggiano
- Peel the shallot
- Finely chop the parsley
- Peel the carrot
- Wash the celery stalks
- Peel the onion
- Peel the potato
