Melanzane alla parmigiana
Eggplant, tomato, and Parmesan cheese

Ingredients: Serves 4

Here is the shopping list for Italian Live Cooking, which took place on Monday, April 20, 2020.

The tomato sauce

2 tablespoons extra virgin olive oil

1 shallot

1.5 kg peeled tomatoes

Salt

 

The eggplants

1 liter sunflower oil

6-7 eggplants (cut lengthwise into slices approx. 4-5 mm thick)

When the dish is almost ready

200 g mozzarella

100 g Grana Padano / Parmigiano Reggiano (preferably aged at least 24 months)

What you can do in advance

Put all the ingredients out on your kitchen counter so you're ready at 5 p.m. when we get started.

Divide them into small piles on the kitchen table, as we have done in the shopping list above, so that the various items you need to make the different dishes are grouped together and ready to use.

It is a good idea to

  • Open the package containing the peeled tomatoes.
  • Peel the shallot
  • Wash the eggplants
  • Chop the mozzarella or cut into thin slices.
  • Grate the Grana Padano/Parmesan cheese
Pots and pans
  • Pot for sunflower oil
  • Absorbent paper, the eggplants must be fried and dried
  • Pot for the tomato sauce
  • Hand blender for the peeled tomatoes (if you don't have one, use a wooden spoon or similar).
  • Cheese grater
