Eggplant, tomato, and Parmesan

The tomato sauce
2 tablespoons extra virgin olive oil
1 shallot / ‘wild onion’ to some
1.5 kg peeled tomatoes
Salt
Eggplants
1 liter sunflower oil
6-7 eggplants (to be cut into thin slices lengthwise (4-5 mm thick)
Once the dish is almost done
200 g mozzarella
100 g Grana Padano / Parmigiano Reggiano (preferably aged at least 24 months)

What can you do beforehand
Place all the ingredients on your kitchen table so that you're ready for 5 pm.
Divide them into small piles on the kitchen table, as we have divided them into the shopping list above, so that the different things you need to cook are together and ready to use.
It is a good idea to
- Open the peeled tomato packaging(s)
- Peel the shallot
- Wash the eggplants
- Chop the mozzarella or cut into thin slices
- Grate the Grana Padano/Parmigiano
Pots and pans
- A pot for the sunflower oil
- Absorbent paper for the eggplants, they will be fried
- Pot for the tomato sauce
- Hand blender for the tomato sauce (if you don’t have one, use a ladle, large fork, or similar)
- Grate for the cheese
