Pasta fresca e ragout d'anatra


Fresh pasta and duck ragout


Ingredients:

4 persons

Fresh pasta

300 gr flower type ‘00’

200 gr Semola

6 eggs

Water

Salt

You will not need a pasta machine, only muscles and a rolling pin

Duck ragout

2 duck breasts, ca 500 gr (OR 2 breasts of guinea fowl still with its thigh on , ca 500 gr. Or 400 gr wild boar or quale. Or a wild chicken, ca 500 gr (if you can find one). Or ca 500 gr poussin.

Can you use a normal chicken or poussin? Yes, only thing is that the final result will be lighter in its expression

2 carots 

4 sticks of celery

1 onion

1 leaf of dried laurel 

2 stalks of parsley

Peperoncino / red chili

S/P

Olive oil extra vergine

1/2 spoon saltet butter

10-15 cl white wine

Ca 50 gr Grana Padano or Parmigiano Reggiano – preferably aged min 24 monts
